We began with Champagne Bollinger — a fitting introduction that immediately set the tone. Precise, elegant, and deeply expressive, it mirrored the philosophy of the المكان itself: each wine here is not simply served, but respected, understood, and experienced.

Salon GCM: A Legacy Reimagined

The story of GCM begins in the early 1900s, when a Monaco merchant first established a wine trading house near what would become the Port of Monaco. Over the decades, the cellar grew into one of the most respected names in fine wines, supplying prestigious establishments across the Principality.

Today, under the direction of third-generation heir Sébastien Dameno, the venue enters a new era. With Salon GCM, the focus shifts from pure acquisition to something far more meaningful: experience.

The concept is simple yet rare — guests are invited to explore over 3,000 references of wines and spirits, guided by a sommelier, and to taste their chosen bottle on-site. If unfinished, it is carefully sealed in wax to be taken away, preserving both the liquid and the moment.

And your personal connection to the cellar?
Dameno: Proustian madeleine is the scent of a bottle breaking on the cellar floor. It’s something that stayed with me since childhood — very sensory, very emotional.
